Bean Salad Big Hit at Church Potluck

CHILLIWACK, BC

Of all the options available at the East Chilliwack MB Christmas potluck this past weekend, the most popular, by far, was a salad consisting of black beans and edamame made by Ms. Erin Stobbe, 46, of nearby Yarrow.

“Move over, whipped cream and Jell-o, there’s bean salad in town!” exclaimed Jessica Friesen as she scooped a massive pile of bean salad onto her plate. “Are there meat buns and formavorscht with mustard available? Who cares! It’s bean salad!”

It didn’t take long and all the bean salad was completely devoured, which sent Stobbe back home to quickly make another bowl.

“It’s like this every time I make the bean salad,” said Stobbe. “People just can’t get enough. I guess I should be better prepared.”

The bean salad has made Stobbe something of a local celebrity, with requests for her, and her bean salad, to appear at potlucks throughout the region.
