With two golds and a silver so far at the 2024 games, Summer McIntosh has captured the hearts of the nation, including the Canadian Mennonite population who have renamed a popular borscht after the Olympic hero.
“Move over Summer Borscht. Now we’ve Summer McIntosh Borscht!” said Mrs. Unger of St. Catharines, Ontario. “The recipe will be mostly the same except for a few sprinkles of gold leaf … and double the amount of sorrel.”
The St. Catharines Third Mennonite Church will be serving Summer McIntosh Borscht this Sunday after church, along with apple pie, made strictly with McIntosh apples of course.
“We’re trying to raise money for a new gymnasium,” said Mrs. Unger. “Although there’s also some talk of turning the unused baptismal tank into a swimming pool.”
Unger says she’s caught the Summer McIntosh fever and claims she’s not the only one.
“Right now she’s clearly Canada’s greatest athlete,” said Mrs. Unger. “She’s so inspirational. I hear all the young people back home in Grunthal are swimming laps at the pits.”
While Unger maintains the borscht recipe will remain mostly the same, she is hoping to include a drop of Olympic pool water in each cup of soup.
